½ cup graham cracker crumbs
3 tablespoons sugar
6 tablespoons melted butter

8 ounces soft cream cheese
1 cup heavy whipping cream
1 can of sweetened condensed milk

Half a cup of key lemon juice
Zest of 2 key lemons

1 cup heavy whipping cream
3 tablespoons powdered sugar

1. Mix together the graham crumbs, butter, and sugar. Press out into a 9-inch round pan and use the bottom of a flat cup or flat measuring cup to press evenly along the bottom and use your fingers to press evenly along the sides. Place it in the refrigerator until the filling is ready.

5. Pour the mixture into the cooled dough and place it in the fridge for at least 3 hours, or overnight.
6. Whip the cream and powdered sugar together until medium-stiff peaks form. You can use the piping bag and star tip to place a design on top, or just spread it around with a spatula. Add fresh lemon zest, if desired.
